Green beans with beef

 

Ingredients  (5 servings)

 

450 g green beans -- 1 kg low-fat beef -- 4 TB. olive oil -- 2 carrots -- 50 g white wine -- 1 liter of water -- 1 TB. parsley -- 1 TB. anise -- 1 TB. mint -- 1 dry onion -- 1 fresh onion -- 1 clove of garlic -- Juice and zest of 2 lemons -- Salt -- Pepper

 

 

Directions

 

 

Cut the beef into (not too small) pieces and put it in a saucepan with salt and pepper. Cut the carrots, crumble the onion and the garlic. Add them along with the wine and the water. Simmer for about an hour and a half. Then add the beans.

 

Fold the leaves of parsley, dill and mint and put them in a bowl. Cut the green part of the fresh onion into small slices and put them in the bowl. Add lemon zest and mix. Put the herbs in the sauce with lemon juice. Simmer for 10 minutes. Just make sure that beans won't become too soft; they should be al dente! No need for salad of course; serve with whole wheat bread, and wine or beer.
